ভাতের মাড়ের ক্ষতিকর দিক: কী জানা জরুরি

আমাদের দৈনন্দিন খাবারের একটি পরিচিত অংশ হলো ভাতের মাড়। অনেকেই এটি ফেলে দেন, আবার কেউ কেউ পুষ্টিগুণের কথা ভেবে খেয়ে থাকেন বা বিভিন্ন কাজে ব্যবহার করেন। তবে উপকারিতার পাশাপাশি ভাতের মাড়ের ক্ষতিকর দিক সম্পর্কেও সচেতন থাকা জরুরি। কারণ সব খাদ্য উপাদান সবার জন্য সমানভাবে উপযোগী নাও হতে পারে।
প্রথমত, ভাতের মাড়ে প্রচুর পরিমাণে কার্বোহাইড্রেট থাকে। যারা ডায়াবেটিসে ভুগছেন বা রক্তে শর্করার মাত্রা নিয়ন্ত্রণে রাখতে চান, তাদের জন্য অতিরিক্ত মাড় পান করা ক্ষতিকর হতে পারে। এটি দ্রুত রক্তে গ্লুকোজের মাত্রা বাড়াতে পারে। বিশেষ করে সাদা চালের মাড়ে গ্লাইসেমিক ইনডেক্স তুলনামূলক বেশি হওয়ায় সতর্কতা প্রয়োজন।
দ্বিতীয়ত, ওজন নিয়ন্ত্রণে যারা সচেতন, তাদের জন্য ভাতের মাড় নিয়মিত পান করা বাড়তি ক্যালোরির উৎস হতে পারে। অনেকেই মনে করেন এটি হালকা খাবার, কিন্তু বাস্তবে এতে শক্তির পরিমাণ কম নয়। দীর্ঘদিন অতিরিক্ত গ্রহণ করলে ওজন বৃদ্ধির ঝুঁকি থাকতে পারে।
তৃতীয়ত, যদি অপরিষ্কার পানি বা নিম্নমানের চাল ব্যবহার করা হয়, তাহলে মাড়ে দূষিত উপাদান থাকতে পারে। এতে পেটের সমস্যা, গ্যাস্ট্রিক বা ডায়রিয়ার ঝুঁকি দেখা দিতে পারে। তাই স্বাস্থ্যসম্মত পরিবেশে প্রস্তুত না হলে এটি গ্রহণ করা ঠিক নয়।
আরেকটি বিষয় হলো, কিছু মানুষের ক্ষেত্রে অতিরিক্ত মাড় খাওয়ার ফলে হজমে অস্বস্তি বা পেট ফাঁপার সমস্যা হতে পারে। বিশেষ করে যাদের হজমশক্তি দুর্বল, তাদের জন্য এটি বিবেচনার বিষয়।
